Fudgy dark chocolate cupcakes are topped with a thick creamy chocolate ganche frosting and sprinkles.

ingredients

  • 2 cups almond flour
  • 1/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut sugar
  • 2 eggs
  • 2/3 cup plain greek yogurt
  • 1 teaspoon vanilla

Ganache

  • 1 1/3 cup chocolate chips
  • 1 cup heavy cream

Method

  • Step 1

    Fill a lined muffin tray using a cookie scoop to ensure even cupcakes.

  • Step 2

    Bake at 350F for 15-18 minutes or until a toothpick comes out clean. Let cool and top with a chocolate ganache or your favorite frosting and then sprinkles

  • Step 3

    Warm up heavy cream in a sauce pan until steaming, but not boiling. Pour onto the chocolate chips. Let sit for 2 minutes. Stir until all of the chocolate is melted and a thick ganache is reached.
