Roasted Garlic Hummus

ingredients

  • 1 can Chickpeas
  • 1/4 teapsoons Baking Soda
  • 1 head of Garlic
  • 1/4 cup Tahini paste
  • 1/4 cup Fresh Lemon Juice
  • 1 teasopon Salt
  • 2 cubes Ice
  • 1 tabelspoons Garnish Olive Oil
  • Garnish Toasted Pine nuts
  • Garnish Sumac

Method

  • Step 1

    Preheat the oven to 425°F.

  • Step 2

    Cut off the very top of the garlic clove. Drizzle some olive oil, sprinkle salt and black pepper, then wrap securely in tin foil.

  • Step 3

    Roast garlic in the oven for 30-40 minutes. Remove and allow to cool. Squeeze the roasted garlic out of each clove into a small bowl using your fingers.

  • Step 4

    Pour the chickpeas from the can into a small pot, add ¼ teaspoon baking soda, and bring it to a boil for five minutes. Drain the chickpeas and leave them to cool down.

  • Step 5

    Add the chickpeas to the food processor. Puree until a smooth, powder-like mixture forms.

  • Step 6

    Add Tahini paste, salt, and lemon juice. Blend for 1 minute.

  • Step 7

    While the processor is running, add the ice cube and blend.

  • Step 8

    Add the squeezed roasted garlic to the hummus in the food processor and grind until a smooth, creamy texture.

  • Step 9

    Garnish with toasted pine nuts, parsley, sumac, and olive oil.
