"Lunch today was 1 1/2 cups oats & 2 teaspoons chia seeds soaked in 2 cups homemade coconut-hempseed milk for about 4 hours, with about 2-3 cups of fresh wild blackberries & 2 tbsp of maple syrup mixed in just before eating. So good! You could easily let the oats/chia soak for over 24 hours if you wanted. Also, for the "milk" I just blended 1/2 cup hemp seeds, 1/2 cup coconut flakes, a bit of vanilla, and about 4 cups water then strained the mixture through a nut milk bag. Creamy animal-friendly goodness. Homemade nut & seed milks are so easy to make and much yummier than store bought!"
