Cranberry Sauce with Orange & Port

ingredients
- 400 gram frozen cranberries
- 150 gram golden caster sugar
- 250 milliliters fresh water
- 1 juice and zest of fresh orange
- 1 teapsoons ground cinnamon
- 80 millileters vintage port
Method
Step 1
Place the cranberries in a large pan with the sugar, water, orange zest & juice & cinnamon. Bring to the boil.
Step 2
Reduce to a simmer and leave to cook for around 10 minutes. Give them a good stir and squash them with the back of a wooden spoon.
Step 3
Stir in the port and cook on a medium heat for a further 25-30 minutes. Let it bubble away until the sauce is lovely and thick and reduced by half. Remove from the heat and leave to cool completely.
Step 4
Once fully cooled, ladle into your jars. The sauce will keep in the fridge for up to 2 weeks.
