ingredients

For the dough

  • 3/4 cup warm milk
  • 2 teapsoons active dry yeast
  • 2 tabelspoons sugar
  • 3 cup all purpose flour
  • 1 large egg
  • 1 teapsoons salt
  • 4 tabelspoons butter, softened

For the filling

  • 1 cup finely chopped onion
  • 1 tabelspoons finely chopped garlic
  • 1/2 cup finely chopped green bell peppers
  • 2 cup pureed tomatoes
  • 1 tabelspoons pav bhaji masala
  • 2 tablepoons salted butter
  • 2 tabelspoons oil
  • salt
  • 2 tabelspoons finely chopped cilantro
  • 2 cup pepperjack cheese

  • Salted butter to grease the pan
  • 2 tabelspoons melted salted butter

Method

  • Step 1

    Mix the milk, sugar and yeast and let it sit for 10 mins and then add the flour, egg and salt.

  • Step 2

    Slowly add the butter, one cube at a time, and keep mixing the dough.

  • Step 3

    Once all ingredients are mixed, knead the dough for 10 mins and cover to prove for about an hour or until doubled in size.

  • Step 4

    In the meantime, make the filing by heating oil in a non-stick pot and frying the onions until brown. 

  • Step 5

    Next add the garlic and bell peppers and sauté for another 5-6 mins and then add the butter, pav bhaji masala, salt and tomatoes and cook until oil starts to separate.

  • Step 6

    Garnish with cilantro and set aside to cool completely.

  • Step 7

    Grease a loaf pan with butter and set aside.

  • Step 8

    Once the dough has risen, deflate it and divide into 12 roundels. Flatten each roundel with a rolling pin into a 5 inch circle and spread about 1 tbsp of the filling leaving a little border around.

  • Step 9

    Top that with some cheese and then fold over to make a semi circle sealing around the edges.

  • Step 10

    Place this piece in the loaf pan and continue to repeat with the remaining dough balls, stacking each filled semi circle in the loaf pan.

  • Step 11

    Cover the loaf pan and set aside to rise again for around 30-40 mins to rise and then bake at 350F for about 35 mins.

  • Step 12

    As soon as the bread is out of the oven, generously brush with salter butter and set aside to cool, loosely covered with a piece of foil.

  • Step 13

    Serve warm or at room temperature!
