ingredients

  • 1 onion ,cut into 7-8 rings
  • Oil for deep frying

For the batter:

  • 8-10 tabelspoons chickpea flour
  • 1 tabelspoons rice flour
  • 1/2 teapsoons turmeric
  • 1/2 teapsoons red chili powder
  • teapsoons coriander powder
  • Water
  • Pinch of baking soda

For the stuffing:

  • 2-3 boiled potatoes
  • 2 finely chopped garlic cloves
  • 1/2 inch finely chopped ginger
  • 2 finely chopped green chillies
  • 1/2 cup finely chopped cliantro
  • 1/4 teapsoons mustard seeds
  • 5-6 curry leaves
  • Pinch of hing (asafetida)
  • 1 tabelspoons oil

Method

  • Step 1

    Mix all ingredients listed under the batter with 1/2-3/4 cup to form a smooth batter (add more water if needed).

  • Step 2

    Heat 1 tbsp oil and once hot, add mustard seeds to crackle along with hing and curry leaves. Immediately pour this tempering over the garlic, ginger, cilantro and potatoes. Mix this all together and your stuffing is ready.

  • Step 3

    Stuff the onion rings with this potato mix and dip them individually in the batter.

  • Step 4

    Deep fry each onion ring until golden.

  • Step 5

    Serve hot!
