This recipe uses three kinds of cheese which gives these mac and cheese bites a soft warm center and Annie's Organic White Cheddar Squares gives it a crispy, crunchy exterior. These mac and cheese are just like crispy potatoe chips, you can't just have one!

Method

  • Step 1

    Preheat oven to 425°F. Line a large baking pan with parchment paper. Set aside.

  • Step 2

    Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and set aside.

  • Step 3

    Add butter, milk, Annie’s cheese packet, pepper jack cheese, and parmesan cheese into the pot. Once sauce is thickened, add the cooked pasta back into the pot and stir to combine.

  • Step 4

    Place mac ‘n cheese in an airtight container. Tightly pack the mixture and freeze for at least 1 hour.

  • Step 5

    Meanwhile, place eggs in a small bowl. Then add cheddar square crumbs, salt, paprika in another bowl and stir to combine. Set aside.

  • Step 6

    Remove mac 'n cheese from the freezer and scoop out 1 tbsp of the mixture. Roll it around your hand to make a tightly-packed ball that is about 1 ½ inches in diameter. Repeat with the remaining mixture.

  • Step 7

    Dip mac ‘n cheese ball in the egg bowl, then roll it through the crumbs mixture. Place on the prepared baking sheet, and repeat with remaining balls.

  • Step 8

    Bake for 8-10 minutes until mac bites are light and golden. Serve immediately.
