  • 1 package pasture-raised, uncured bacon
  • 1 large white onion, diced
  • 8 large eggs
  • 3/4 cup organic whole milk (such as A2 milk)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 1/2 cups organic shredded cheddar cheese
  • 1 (16 ounce) package Cascadian Farm Frozen Spud Puppies
  • 1 green onion, chopped
  • Red pepper flakes (optional), to taste

Method

  • Step 1

    Preheat the oven to 350°F and spray a 9-inch square baking dish with avocado oil spray. Set aside.

  • Step 2

    In a large pan, cook the bacon until crispy over medium-high heat. Blot with paper towels, crumble, and set aside. Add the onions to the same pan and sauté until translucent, about 2-3 minutes.

  • Step 3

    In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder. Pour the mixture evenly over the prepared baking dish.

  • Step 4

    Transfer the cooked onions and 2/3 of the crumbled bacon evenly on top of the egg mixture, then top with 1 cup shredded cheese.

  • Step 5

    Arrange the frozen tater tots in a single layer on top of the casserole mixture, then bake for 40 minutes.

  • Step 6

    Remove the casserole from the oven and sprinkle the remaining cheese and bacon on top. Bake for another 5-10 minutes, until the cheese has melted and the eggs are set.

  • Step 7

    Sprinkle the cooked casserole with green onions and red pepper flakes. Cut into squares and enjoy immediately.
