ingredients
Caramel
- 1 1/3 cups cup sugar
- 100 ml water
- 750 ml whole milk
- 500 ml heavy cream
- 1 vanilla bean
- 5 large eggs
- 8 eggs, yolks only
- 1 cup sugar
- 1 teaspoon kosher salt
- Boiling water as needed
Method
Step 1
Preheat the oven to 350 degrees Fahrenheit.
Step 2
Start by making the caramel. Add sugar and water to a non stick pan. Bring the mix to a rolling boil. Once it starts to color lower the heat and continue to cook until it turns to a deep amber color. Transfer the caramel to a pyrex cup and pour into your mason jars.
Step 3
Combine milk, heavy cream, vanilla bean along with the seed to a pot and bring it to a gentle simmer. Be careful not to boil it.
Step 4
Mix together the eggs, sugar, and salt. Whisk the ingredients together then ladle in the warm milk mix.
Step 5
Strain the mix through a fine mesh strainer then pour into your mason jars.
Step 6
Transfer the jars to a tray. Add boiling water. Cover with aluminum foil and bake at 350 degrees Fahrenheit for 1 hour or until the custard is set.
Step 7
When it’s done remove and chill. This flam recipe is best served after its chilled. You can store it in the fridge but keep in mind that it’ll loose it’s texture.
