ingredients

  • 2 medium-sized zucchinis, grated
  • 1 small onion, sliced
  • 2 cloves of garlic, minced
  • 1/2 cup chickpea flour, or more if needed
  • Season to taste
  • Olive oil for frying

Method

  • Step 1

    Grate zucchinis and let them sit in a colander with salt for 10 minutes to remove excess moisture. Squeeze out the liquid.

  • Step 2

    In a large bowl, combine grated zucchini, sliced onion, minced garlic, chickpea flour, and season to taste. Mix well.

  • Step 3

    Heat olive oil in a skillet over medium heat. Spoon 2 tablespoons of the zucchini mixture into the skillet for each fritter. Flatten slightly.

  • Step 4

    Cook for 3-4 minutes on each side until golden brown. Transfer fritters to a paper towel-lined plate to remove excess oil. Serve warm with tzatziki sauce on top. Enjoy!
