  • 1 package Double 8 Cattle Company Fullblood Wagyu Cajun Sausage
  • 2 pounds Red Potatoes (halved or quartered into bite-size pieces)
  • Grapeseed Oil
  • 2 medium Leeks (green tops removed and sliced into 1/4 inch coins)
  • 3 cloves minced Garlic
  • 1 cup Butternut Squash, cut into bite-sized pieces
  • 2 cups Brussels Sprouts, cut in half
  • 1/2 cup Beef or Chicken Stock
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper
  • minced (to garnish) Fresh Parsley

  • 1 1/2 teaspoons Smoked Paprika
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Cayenne
  • 1/2 teaspoon Dried Oregano
  • 1/2 teaspoon Dried Thyme
  • 1/4 teaspoon Red Pepper Flakes

Method

  • Step 1

    PREPARING THE FULLBLOOD WAGYU CAJUN SAUSAGE SKILLET Preheat oven to 375°F. Prepare your spice blend by placing all “spice blend” ingredients (smoked paprika, onion powder, cayenne, dried oregano, dried thyme, and red pepper flakes) in a small bowl. Set aside. In a large cast iron skillet, heat enough grapeseed oil to generously coat the bottom of the skillet. Once the grapeseed oil is heated, add the halved or quartered red potatoes to the pan. Let the potatoes cook for several minutes, browning on one side before turning them to the other side. Cook the potatoes like this for 15 minutes. Add the bite-size pieces of butternut squash, and let them cook with the potatoes for 10 minutes longer. Add the leeks, halved brussels sprouts, and chicken or beef stock. Cook an additional 5 minutes. Add the minced garlic, kosher salt, and freshly ground black pepper. Coat the vegetables in the “spice blend” that you prepared earlier in the process. Then, place the uncut/whole Fullblood Wagyu cajun sausages on top of the vegetables. Bake the dish in the oven at 375°F for 30 minutes. Then, remove the Fullblood Wagyu cajun sausage from the pan, and reserve. Stir the vegetables, and return them to the oven to cook. Cook for another 20 to 25 minutes until the vegetables are soft, while stirring every 7 to 8 minutes.

    FINAL STEPS Cut the Fullblood Wagyu cajun sausages on a biased cut 1/4 inch thick. Remove the vegetables from the oven. Place the cut cajun sausage on the vegetables. Garnish with fresh minced parsley. Serve while warm, and enjoy!
