Pumpkin Spice Apple Fruit Donuts

"Now that summer break is officially over and we are either heading back to work and/or school (both grade school and uni), more and more of us will be reaching for that quick snack after a hard day’s work. Why not reach for something that is both nutritious and satisfying by trying these pumpkin spice apple fruit donuts. You can use any fruit you have on hand. Simply cut the fruit into 1/2 inch thickness and dress them up with desired toppings. Pro tip 1: pre-cut apple rings and other desired fruit a head of time and store in a container in the fridge. Make sure to toss the fruit in a little lemon juice to prevent browning of the fruit. Pro tip 2: keep the skins of fruit on to ensure increased fibre intake."

ingredients

  • sliced Apples, with the skin
  • Peanut butter
  • Granola
  • Sunflower seeds
  • Hemp hearts
  • Dark chocolate chips
  • chopped Almonds
  • Pumpkin spice

Method

  • Step 1

    Sliced apples into 1/2 inch rounds, making sure to keep the skin on. This will increase the fibre content of the snack which will help keep you fuller for longer.

  • Step 2

    Spread a layer of peanut butter onto the apples to act as the glue. Note: Can substitute with any nut/seed butter or yogurt if desired.

  • Step 3

    Lastly, add your choice of toppings and finish with a dash of pumpkin spice. Other toppings that work well includes: pumpkin seeds, unsweetened coconut, dried fruit such as raisins or cranberries, and frozen blueberries.
