ingredients

  • 1 cup All purpose flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Cinnamon or ground nutmeg
  • 1 cup Eggnog
  • 1 tablespoons oil + extra to cook & prevent sticking
  • 1/2 teaspoon Vanilla extract
  • 1 Egg
  • Pinch of salt

Method

  • Step 1

    Mix dry and wet ingredients in separate bowls then combine in one.

  • Step 2

    Over medium heat, add a tablespoon of oil to a small frying pan.

  • Step 3

    Once pan is heated, add a couple tablespoons of the batter and spread evenly using the back of a spoon.

  • Step 4

    Cook pancakes for 1 minute on each side. Pancakes are ready to flip once small bubbles form on top.

  • Step 5

    Serve with your favourite toppings. We love to keep it classic with maple syrup, whipped cream and toasted pecans.

  • Step 6

    NOTE: these pancakes can be made ahead of time. Simply make a batch the day before and store in the fridge for the next day or freezer for the week ahead. When ready to eat, pop pancakes in the toaster and enjoy with whatever topping(s) you like!
