- 1 sheet of puff pastry, thawed
- Golden syrup (maple syrup or honey can also be used), as needed
- 8 rhubarb stalks
- 2 tablespoons golden caster sugar (or granulated sugar)
- 1 large egg, beaten
Method
Step 1
Preheat your oven to 160°C (360°F) and line a large baking sheet with baking paper.
Step 2
Trim the rhubarb into roughly 2-inch pieces, ensuring each piece is of the same length.
Step 3
Drizzle golden syrup onto the parchment paper. Arrange the rhubarb pieces on top in a herringbone pattern, starting with one row at the top and then building up from the bottom.

Sprinkle the rhubarb lightly with golden caster sugar.
Step 5
Place the puff pastry over the rhubarb, ensuring to cover it completely.

Crimp the edges of the pastry with a fork and score the top lightly.

Brush the pastry with the beaten egg to create an egg wash.

Bake the tart for 35 minutes, or until the pastry golden brown.

Remove the tart from the oven and let it rest for 5 minutes. Some juice will be released from the rhubarb; carefully tilt the baking sheet to pour this liquid into a jug.

Place a board over the tart and carefully flip it over to invert the tart onto the board.
