ingredients
- 1 1/2 pounds fresh Atlantic Salmon, cut into 1 1/2-inch cubes
- 1 zucchini, cut into 1/2-inch thick half-moons
- 1 yellow summer squash, cut into 1/2-inch thick half-moons
- salt, to taste
- black pepper, to taste
- 2 tablespoons olive oil, plus more for grill
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice, plus 1 teaspoon lemon zest
- 1 tablespoon fresh chives, finely minced
- 1 tablespoon fresh parsley, finely minced
- 1 tablespoon fresh thyme, finely minced
- 2 large cloves garlic, finely minced
- wooden skewers, soaked in water an hour before assembling
Method
Step 1
Preheat a clean outdoor grill to medium-high heat.
Step 2
Use two parallel skewers to thread salmon cubes, alternating with pieces of zucchini and yellow squash. Season with salt and pepper.
Step 3
In a large bowl, combine olive oil, Dijon mustard, lemon juice and zest, chives, parsley, thyme and garlic to create the marinade.
Step 4
Spoon the marinade over the Atlantic Salmon and veggie skewers, rotating to cover all sides. Allow to rest for 5-10 minutes.
Step 5
Lightly oil the hot grill grates before placing the skewers on the grill. Grill for 2-3 minutes on each side, about 10 minutes total. Remove skewers and serve with your favorite sides. Enjoy!
