These Garlic, Lemon, and Herb Salmon Kabobs are the perfect addition to any weeknight summer meal! Be sure to soak the skewers in advance to ensure they don't burn when grilled.

ingredients

  • 1 1/2 pounds fresh Atlantic Salmon, cut into 1 1/2-inch cubes
  • 1 zucchini, cut into 1/2-inch thick half-moons
  • 1 yellow summer squash, cut into 1/2-inch thick half-moons
  • salt, to taste
  • black pepper, to taste
  • 2 tablespoons olive oil, plus more for the grill
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice, plus 1 teaspoon lemon zest
  • 1 tablespoon fresh chives, finely minced
  • 1 tablespoon fresh parsley, finely minced
  • 1 tablespoon fresh thyme, finely minced
  • 2 large cloves of garlic, finely minced
  • wooden skewers, soaked in water an hour before assembling

Method

  • Step 1

    Preheat a clean outdoor grill to medium-high heat.

  • Step 2

    Use two parallel skewers to thread salmon cubes, alternating with pieces of zucchini and yellow squash. Season with salt and pepper.

  • Step 3

    In a large bowl, combine olive oil, Dijon mustard, lemon juice and zest, chives, parsley, thyme and garlic to create the marinade.

  • Step 4

    Spoon the marinade over the salmon and veggie skewers, rotating to cover all sides. Allow to rest for 5-10 minutes.

  • Step 5

    Lightly oil the hot grill grates before placing the skewers on the grill. Grill for 2-3 minutes on each side, about 10 minutes total. Remove skewers and serve with your favorite sides. Enjoy!
