ingredients

  • 3/4 cup oats
  • 1/2 teaspoon baking powder
  • 1/2 ripe banana, mashed
  • 1 tablespoon almond butter
  • 2 tablespoons coconut yogurt, plus more for topping
  • 1/3 cup coconut milk
  • Desiccated coconut, for topping

Method

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    In an ovenproof bowl, mix together oats, baking powder, banana, almond butter, coconut yogurt, and coconut milk until well combined.

  • Step 3

    Bake for 25 minutes or until a toothpick comes out clean.

  • Step 4

    Once cooled, cover the top with more coconut yogurt (you can mix it with some maple syrup if you prefer a sweeter taste).

  • Step 5

    Top with desiccated coconut before enjoying.
