ingredients

  • 1 packet udon noodles (or noodles of choice; gluten-free if needed)
  • 1 tablespoon peanut butter (creamy or crunchy)
  • 1 teaspoon sriracha, adjusted to taste
  • 2 tablespoons soy sauce
  • 2 garlic cloves, finely chopped
  • 1/2 inch fresh grated ginger
  • 1 teaspoon granulated sugar, maple syrup, honey, or agave
  • Optional toppings: crushed peanuts, sliced spring onions

Method

  • Step 1

    Follow the package directions for the udon noodles. Drain and set aside, reserving some of the noodle water.

  • Step 2

    In a bowl, mix together the peanut butter, sriracha, soy sauce, garlic, ginger, and sugar (or sweetener of choice).

  • Step 3

    Toss the cooked noodles in the sauce until well-coated. If you prefer a creamier texture, add a splash of the reserved noodle water and mix.

  • Step 4

    Top with crushed peanuts and sliced spring onions for added crunch and flavor.

    Serve the noodles stand alone or with tofu, chicken, or shrimp for extra protein!
