We love puff pastry in recipes both sweet and savory. This genius recipe uses an ice cube tray to make savory spinach and ricotta puff pastry pockets.

ingredients

  • 2 sheets puff pastry
  • 1/2 cup ricotta cheese
  • 1/4 cup shredded mozzarella cheese
  • Handful of spinach
  • 2 minced garlic cloves
  • 1/2 tablespoon olive oil
  • 1 egg
  • Pinch of salt
  • Freshly cracked black pepper
  • Additional egg, for egg wash

Method

  • Step 1

    Start by heating some oil in a pan, add in the minced garlic and sauce for a minute. Add in spinach and cook until spinach has wilted down.

  • Step 2

    To a bowl, add ricotta, mozzarella, 1 egg, the garlic spinach, salt, and pepper. Mix to combine.

  • Step 3

    Thaw the puff pastry sheets and using a rolling pin, roll it out to make them thinner.

  • Step 4

    Place one piece onto the ice cube tray and using your fingers press down onto each space making a pocket.

  • Step 5

    Fill each space with the ricotta mixture and add the rolled out second piece of pastry dough. Pinch all the corners well, trim the excess pastry dough and freeze.

  • Step 6

    Once frozen, remove from the tray. Cut into individual pieces and either store them in the freezer up to 3 months or brush egg wash on them and bake under 400F for about 15 minutes. Enjoy!
