ingredients

  • 2 slices of bread
  • 1 tablespoon butter, divided
  • 2 tablespoons store bought or homemade pesto, divided
  • 1 ball of burrata
  • 2 slices of cooked bacon

Method

  • Step 1

    Spread 1/2 tablespoon of butter on one side of each slice of bread.

  • Step 2

    Flip the slices over, and on the unbuttered side of one slice, spread 1 tablespoon of pesto.

  • Step 3

    Place the burrata ball on top of the pesto, breaking it apart slightly to cover the bread evenly.

  • Step 4

    Add the two slices of cooked bacon on top of the burrata.

  • Step 5

    Place the second slice of bread on top, buttered side facing out.

  • Step 6

    Heat a skillet over medium heat. Once hot, place the sandwich in the skillet and cook on both buttered sides until golden brown and crispy, usually 2-3 minutes per side.

  • Step 7

    Remove from the skillet, let it cool for a moment, then slice and serve with tomato soup if desired.
