Peach, Avocado, Tomato, and Basil Salad with Goat Cheese I try and make a really big salad with every dinner, but it has to be yummy for teenage boys and a toddler to eat it! I love when I can put so many flavorful fruits, veggies, and herbs in there, that you don't really need a fancy dressing. I drizzled a little bit of olive oil, raw honey, and a bit of sea salt and pepper on top of this, and it was good to go! Simple, healthy, and delicious! #feedfeed

Recipe:

Mint Layer Ingredients:

1 Avocado
1/3 Cup Raw Honey
6 Tablespoons coconut oil, melted
1 1/2 Cup shredded unsweetened coconut
1/4 Teaspoon Peppermint Extract
dash of sea salt

Chocolate Layer Ingredients:

1/4 Cup coconut oil
2 Tablespoons Raw Honey
1/4 Cup Cacao powder
1/4 Teaspoon vanilla extract
dash of sea salt, then I grinded some sea salt on the top after it was cooled.

Mint Layer Instructions:

Line a 8×8 inch baking dish with foil. Place all ingredients in high powered blender or a food processor. Blend until all ingredients are thoroughly mixed. Smooth mixture into prepared dish and stick in the freezer while you make the chocolate layer.

Chocolate Layer Instructions:

In small saucepan, melt coconut oil and honey over low heat. Remove from heat and stir in remaining ingredients (ok, I forgot to do this and just dumped it all in at the same time!). Pour over chilled bottom layer and return to the freezer for about 15 minutes, or until the chocolate layer is hardened. Remove from foil and cut into bars. Store covered in the freezer.

It's not traditionally "healthy", but it's super light and sooooo delicious. I tore this recipe from @real_simple magazine back in 2012 (before Pinterest!!) and have made it numerous times since (yes, I have it al folded up in my recipe box! 😂👵🏻)! Thai Coconut Chicken Soup // I'm sure most of you are feeling the warmth of spring, but...in Seattle, we are NOT-UGH!! 😫 But...while I'm sick of wearing layers upon layers, I never get tired of yummy soups! 🤗 Especially easy ones that are practically cooked without me! 🙌🏻💃🏼 • With all the scheduling conflicts, dinner has to be easy! The nice thing about this meal (which admittedly I was worried about at first...😬🙈), is that the coconut cream is filling! It totally stays with you! My teenage stepson, who can eat A LOT and normally isn't a huge fan of most of my "healthy" dinner attempts, had one big bowl, and then said... • "I really thought I was going to go back for a 2nd bowl, because it was so good, but I'm kind of full..." #healthyfatsfortheWIN 🙌🏻 • This is a recipe that I've now done twice because after the first attempt was so well receive.... and it was SO EASY?!? They were a total success, so I'll be sharing the full recipe + more pictures on the blog next week! • All you need is a ripened banana + cooked quinoa + eggs + almond milk. Really, you could play with the measurements depending on how many people you had to feed! I'll be posting the recipe I concocted next week on the blog. • Funny story... Salmon Avocado Mango “Tacos” •🌮 • Am I the only one that gets brain dead and can't think of new things to make/eat? It's almost like trying to find a new outfit. Too hard to think about it, so throw on what you had on yesterday, because....it's THERE! Or make what you've made for the last....4 years straight on repeat 😬🙈🙊 • Well, I'm going to look back at some of my favs and vow to make them again.
