Peach, Avocado, Tomato, and Basil Salad with Goat Cheese I try and make a really big salad with every dinner, but it has to be yummy for teenage boys and a toddler to eat it! I love when I can put so many flavorful fruits, veggies, and herbs in there, that you don't really need a fancy dressing. I drizzled a little bit of olive oil, raw honey, and a bit of sea salt and pepper on top of this, and it was good to go! Simple, healthy, and delicious! #feedfeed

Recipe:

Mint Layer Ingredients:

1 Avocado
1/3 Cup Raw Honey
6 Tablespoons coconut oil, melted
1 1/2 Cup shredded unsweetened coconut
1/4 Teaspoon Peppermint Extract
dash of sea salt

Chocolate Layer Ingredients:

1/4 Cup coconut oil
2 Tablespoons Raw Honey
1/4 Cup Cacao powder
1/4 Teaspoon vanilla extract
dash of sea salt, then I grinded some sea salt on the top after it was cooled.

Mint Layer Instructions:

Line a 8×8 inch baking dish with foil. Place all ingredients in high powered blender or a food processor. Blend until all ingredients are thoroughly mixed. Smooth mixture into prepared dish and stick in the freezer while you make the chocolate layer.

Chocolate Layer Instructions:

In small saucepan, melt coconut oil and honey over low heat. Remove from heat and stir in remaining ingredients (ok, I forgot to do this and just dumped it all in at the same time!). Pour over chilled bottom layer and return to the freezer for about 15 minutes, or until the chocolate layer is hardened. Remove from foil and cut into bars. Store covered in the freezer.

4 Ingredient Protein Pancakes • I made these on a whim, with quinoa left over from dinner and a banana that was about to go bad. They were a total success, so I'll be sharing the full recipe + more pictures on the blog next week! • All you need is a ripened banana + cooked quinoa + eggs + almond milk. Really, you could play with the measurements depending on how many people you had to feed! I'll be posting the recipe I concocted next week on the blog. • Funny story... Salmon Avocado Mango “Tacos” •🌮 • Am I the only one that gets brain dead and can't think of new things to make/eat? It's almost like trying to find a new outfit. Too hard to think about it, so throw on what you had on yesterday, because....it's THERE! She modified it by leaving out the 1/4 cup sugar (most recipes from the 50's era seem to have a lot of sugar 😜) to make this paleo, and it tasted great! Clementine Goat Cheese Salad • Every night I try and make a big salad to go with dinner. I like to throw in a lot of good veggies and or fruits to pack in the nutrients and vitamins in one yummy bowl. • Lately, I've been making my own dressing too. I keep it pretty simple, but throw in fun things that compliment what's in the salad every once in a while. • Recipe on the blog! Omit the cheese for #paleo option and top with chopped almonds, walnuts or pumpkin seeds!
