Sweet Potato Breakfast Hash With Apple-maple Chicken Sausage, Thyme & Creamy Feta
Sweet and spicy sweet potato breakfast hash with peppers, apple-maple chicken sausage, thyme and creamy feta?I want to eat breakfast all over again! ?In a large sauté pan, heat 1-2 tbsp coconut oil over medium heat. Add one diced sweet potato and 1/2 bell pepper of choice. Season with salt, pepper, smoked paprika and a dash of cayenne pepper. Cover and sauté 7-8 minutes, stirring every few minutes, until veggies are softened. Add one piece of chopped chicken sausage (I used Al Fresco brand). Sauté uncovered for an additional 3-4 minutes. Create two openings in the hash to crack eggs into. Cover and cook until whites of eggs are no longer opaque. Top with fresh thyme and feta.?
