:: Tiramisu
:: -Using a stand mixer w paddle attachment, beat 6 egg yolks and 6 T sugar until pale yellow, smooth and shiny, about 5 min. -Add 16 oz @belgioiosocheese mascarpone and beat another 3-4 min. -Now switch to the whisk attachment and smaller mixing bowl. Beat 2 c chilled whipping cream until it forms soft peaks. -Gently fold the whipped cream into the mascarpone mixture. -In a shallow bowl, combine 1/2 c kahlua and 1/4 c espresso or strong coffee. -Using trifle bowl or rectangle baking dish, start layering cream filling, sweet baking cocoa, and lady fingers dipped in coffee, ending with the cream and finally a thick layer of cocoa. -For a finishing touch, use a potato peeler to grate a layer of dark chocolate shavings on top. -Chill at least 4 hours or overnight before serving.
