Essentially, the idea is that you replace whatever cooking oil or butter you would usually use to fry an egg with pesto. Why in earth didn’t I think of this??? Course this was right up my alley and I loved it just as much as I thought I would!"

Serves or Makes: 2 servings

Recipe

  • 3 tablespoons pesto
  • 4 eggs
  • salt, to taste
  • pepper to taste
  • pinch of red chili flakes
  • 1 avocado, mashed
  • 2 tablespoons ricotta cheese, optional
  • 2 pieces of sourdough toast, optional

Method

  • Step 1

    Add a few tablespoons of pesto to a large non-stick skillet. Spread it around and let the oil heat up (keep the heat on low so the pesto doesn’t burn).

  • Step 2

    Crack the eggs into the pesto, season with salt and pepper.

  • Step 3

    Let the egg cook slowly until it’s cooked to your liking. Once done, sprinkle with red chili flakes.

  • Step 4

    Enjoy the eggs on their own or spread each piece of toast with a layer of ricotta, mashed avocado, and top two fried eggs. Serve!
