Pesto Fried Eggs might be a current trend, but we think they'll stick around for a while! Skip the oil or butter and fry your eggs in pesto for an earthy, bright flavor that'll enhance your favorite breakfast! Enjoy alone or pair them with toasted sourdough!

- 3 tablespoons pesto
- 4 eggs
- salt, to taste
- pepper to taste
- pinch of red chili flakes
- 1 avocado, mashed
- 2 tablespoons ricotta cheese, optional
- 2 pieces of sourdough toast, optional
Add a few tablespoons of pesto to a large non-stick skillet. Spread it around and let the oil heat up (keep the heat on low so the pesto doesn’t burn).
Crack the eggs into the pesto, season with salt and pepper.
Let the egg cook slowly until it’s cooked to your liking. Once done, sprinkle with red chili flakes.
Enjoy the eggs on their own or spread each piece of toast with a layer of ricotta, mashed avocado, and top two fried eggs. Serve!
