  • 4 russet potatoes
  • 8-10 cups duck fat, lard, or beef tallow
  • Kosher salt, to taste
  • 1 tablespoon cornstarch

Method

  • Step 1

    Peel and grate the russet potatoes using the medium side of a box cheese grater. Add the shredded potato to cold water and agitate it to remove the starch.

  • Step 2

    Strain the potatoes and squeeze out any excess moisture using a clean kitchen rag.

  • Step 3

    In a pot, combine the shredded potato with the chosen fat. Heat on medium-low until it reaches 210°F, stirring occasionally to prevent sticking.

  • Step 4

    Remove the potatoes and strain, saving the fat for later use.

  • Step 5

    Season the potatoes with salt (2-3 teaspoons) and add cornstarch. Gently combine until fully incorporated.

  • Step 6

    On a parchment-lined sheet tray, use a ring mold to shape the potatoes into ovals.

    Place the hash browns in the freezer for a couple of hours or until completely frozen.

    Heat the leftover fat to 375°F.

    Deep fry the frozen hash browns for 5 minutes or until golden brown and crispy (only fry 1-2 at a time).
