- 2 scallions, minced
- 3/4 pound shrimp, peeled and deveined
- 1/2 teaspoon kosher salt
- 1/4 teaspoon granulated sugar
- 1/4 teaspoon MSG (optional)
- 1/4 teaspoon white pepper
- 1 1/2 tablespoons cornstarch
- 1 egg white
- 1/2 teaspoon sesame oil
- 4 slices of milk bread
- Oil (optional), for frying

Step 1
To prepare the dipping sauce: In a small bowl, combine Kewpie mayo, sambal, honey, and sesame oil. Mix well and set aside.

To prep the shrimp: Mince the scallions and prepare the shrimp. Using a cleaver or food processor, smash the shrimp and mince into a coarse paste.

To make the filling: In a bowl, combine the minced shrimp, scallions, salt, sugar, MSG, white pepper, cornstarch, and egg white. Mix until fully incorporated, then add sesame oil and stir well.

Trim the crusts off the milk bread slices. Spread a generous layer of the shrimp mixture on one slice of bread, ensuring even coverage. Top with another slice of bread, pressing down gently to seal the filling inside.

To fry the toast: Deep fry the assembled shrimp toast in oil heated to 350°F for 3-4 minutes on each side, or until golden brown and crispy. Alternatively, for a healthier option, spray the sandwich with oil and air-fry at 350°F for 10 minutes, flipping halfway through.
