ingredients
- 1 lb package large Del Pacifico blue shrimp
- 1 cup of quinoa
- 2 cups of water
- 1/2 cup of cherrry tomatoes
- 2 tablespoon finely chopped basil
- 1 tablespoon finely chopped mint
- 1 Garlic clove
- 1/2 Onion
- 1/2 Cucumber
- 1/2 Yellow bell pepper
- 1 Zucchini
- 1/2 cup of olive oil
- 1/4 cup of Balsamic vinagar
- Salt
- Pepper
- Iced water
Method
Step 1
Stir fry quinoa with a little olive oil, when the pot is very hot add the water. Once it boils lower the flame, cover and cook for 10 minutes.
Step 2
Turn off the flame and let it sit for other 10 minutes.
Step 3
Puff with a fork and cool it down
Step 4
Cut the cherry tomatoes in a half and finely chop the rest of the ingredients.
Step 5
Sauté onions, garlic and zucchini. Cool down
Step 6
Poach the shrimps in boling water for 3 minutes and pass to a bowl with iced water to stop them from cooking. Discard the water and reserve the shrimp.
Step 7
Mix all the ingredientes and season with olive oil, balsamic vinegar, salt and pepper.
Step 8
Salt and pepper
