ingredients
- 1 roughly chopped onion
- 2 carrots, sliced in rounds
- 1 stick sliced celery
- 1 pack sliced mushrooms
- 2 cloves minced garlic
- 1 pack sugar snap peas
- 1 diced sweet potato
- 1 can coconut milk
- 600 milliliter vegetable stock
- 320 gram Uncle Ben's Wholegrain Rice
- Salt & pepper to taste
- Coriander leaves to garnish
Method
Step 1
1. Heat a large pan with oil. Add the onion, celery, carrot and cook for 3-4 minutes until softened.
Step 2
2. Add the broth, coconut milk, garlic, salt & pepper and rice. Stir and bring to the boil.
Step 3
3. Cook over a medium heat for 15 minutes until rice and vegetables are tender. Add the sweet potatoes, mushrooms and sugar snap peas. Cook for 10 minutes.
Step 4
4. Serve with coriander on top.
