ingredients
- neutral oil, as needed
- 1 red onion
- 2 cloves garlic
- 4 pork steaks, thinly sliced
- 1 packet barbecue seasoning
- 1 teaspoon cumin
- 2 teaspoons paprika
- 2 (15.5-ounce) cans kidney beans
- 1 (12-ounce) jar tomato puree
- 12 taco shells
- 1 avocado, sliced
- lettuce, shredded
- grated cheddar
Method
Step 1
In a medium pan, heat the oil. Add the red onion and cook until softened.
Step 2
Add the garlic, pork, barbecue seasoning, cumin and paprika and cook until fragrant and beginning to brown, 10 minutes.
Step 3
Add the kidney beans and tomato puree, simmer for 15 minutes.
Step 4
Serve in a heated taco shell with sliced avocado, shredded lettuce, grated cheese and a wedge of lime.
