ingredients
- 1 finely chopped onion
- 4 cloves garlic
- 1 stick finely chopped celery
- 1 diced red pepper
- 2 tin plum tomato
- crumbled feta
- 4 eggs
- 2 tsp paprika
- 1 tsp cumin
- 1 1/2 tsp chilli flakes
- parsley
- salt & pepper
Method
Step 1
Heat a pan with oil. Add the onion and cook until softened for around 3 minutes.
Step 2
Add the garlic, pepper, celery, plum tomatoes, cumin, paprika, chilli flakes, salt & pepper. Stir everything together.
Step 3
Simmer without stirring for 30 minutes.
Step 4
Make four little dents and crack the eggs seperately into the dents. Simmer for around 10 minutes until the egg whites are cooked. The yolks should still be soft and jiggle when the pan is shaken.
Step 5
Sprinkle with parsley and serve with crumbled feta on top.
