ingredients

  • 2 cloves finely chopped garlic
  • 1 sliced onion
  • 1 carrot, peeled into ribbons
  • 1 small thumb finely sliced ginger
  • 1/4 pack finely sliced mushrooms
  • 1 packet pak choi
  • 1/4 pack sugar snap peas
  • 1/2 pack firm tofu, cubed
  • 1 tbsp soy sauce
  • 500 milliliter vegetable stock
  • 1 pack udon noodles
  • 1 tbsp chilli flakes

Method

  • Step 1

    Heat a pan with oil and soften the onion. Add the garlic, ginger and carrot, stir for 1 minute.

  • Step 2

    Add the mushrooms, stock, soy sauce and cook for 5 minutes.

  • Step 3

    Add the noodles, tofu, sugar snap peas and cook for 8 minutes.

  • Step 4

    Stir in the park choi and serve with some chilli flakes on top.
