Peach salad with tenderstem broccoli & giant couscous

ingredients
Salad
- 1 pack Tenderstem broccoli
- 2 ripe peaches, sliced
- 100 gram merchant giant couscous
- 1 large avocado, sliced
- 1/2 pack mixed leaves
- 1/2 handful of sunflower seeds to garnish
Method
Step 1
Make the vinaigrette and season to taste.
Step 2
Cook the couscous according to the packet for approx. 15 minutes.
Step 3
Heat a griddle pan, add the peaches and cook for approx. 2 minutes on each side until they have griddle marks.
Step 4
Toss the broccoli in olive oil and cook until slightly charred.
Step 5
Place the leaves & avocado on a plate. Scatter the couscous, broccoli, peach slices & sunflower seeds.
