- 2 tablespoons olive oil
- 1 zucchini, large dice
- 1 yellow onion, finely chopped
- 4 cloves garlic, finely chopped
- 1 teaspoon chilli flakes
- 1 teaspoon Kosher salt
- 10 ounces orzo
- 4 cups chicken or vegetable stock
- 1 cup white wine
- 1 pound king prawns
- 2 ounces walnuts, toasted
- 2 1/2 ounces Parmesan, grated
- 1/2 lemon, zested and juiced
- 1 lemon, quartered, for garnish
- arugula to garnish
Method
Step 1
Preheat the oven to 400°F. To an oven proof braiser, add the oil, zucchini, onion, garlic, chili flakes, and salt. Roast until golden brown, 10 minutes.
Step 2
Pour the orzo on top and mix in. Pour in the white wine & 3/4 of the stock and mix together. Put the braiser back in the oven for 15 minutes.
Step 3
Take the dish out, add the remaining stock and stir. Roast for a further 5-10 minutes, making sure the liquid is absorbed.
Step 4
Add the king prawns to the orzo mix and cook for 5 minutes.
Step 5
Take the dish out of the oven, mix in the Parmesan, lemon juice and zest. Season with salt and pepper as needed.
Step 6
Garnish with the toasted walnuts, arugula and quartered lemon. Enjoy!
