ingredients

For the Cauliflower

  • 1 head of cauliflower, cut into florets
  • 1 teaspoon Kosher salt
  • 2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons sunflower oil
  • handful of cilantro leaves

BBQ Sauce Ingredients

  • 1/2 cup BBQ sauce
  • 1/2 cup honey
  • 2 tablespoons ketchup
  • 2 tablespoons hot sauce
  • 1 tablespoon butter
  • 1 teaspoon garlic powder

For the Soy and Sesame Slaw

  • 1/2 head green cabbage, finely sliced
  • 1/2 head red cabbage, finely sliced
  • 2 carrots, cut into ribbons
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup sesame oil
  • 1/4 tsp ground nutmeg
  • 2 1/2 tablespoons white wine vinegar
  • 1/4 teaspoon ground cloves
  • 2 tablespoons lemon juice
  • 3 tablespoons sliced almonds, toasted

Method

Cauliflower Method

  • Step 1

    Preheat the oven to 350°F. Line a baking tray with parchment.

  • Step 2

    Mix all spices in a small bowl. In a separate bowl, add the oil. Dip each cauliflower piece into the sunflower oil, then into the spice mix and lay on the baking tray. Once all pieces are well coated, put the tray into the oven for 20 minutes.

  • Step 3

    After 20 minutes, remove the cauliflower from the sheet tray and add to a large, heat proof bowl. Pour the BBQ sauce over the cauliflower and toss to combine.

  • Step 4

    Return them to the oven for another five minutes.

  • Step 5

    Serve garnished with cilantro leaves and soy and sesame slaw on the side.

BBQ Sauce Method

  • Step 1

    In a small sauce pot over a low-medium heat, add all the BBQ sauce ingredients and simmer until combined, 5 minutes.

For the Soy and Sesame Slaw

  • Step 1

    In a large bowl, mix together the cabbage and carrots

  • Step 2

    In a small bowl, mix together soy sauce, honey, sesame oil, lemon juice and spices.

  • Step 3

    Pour the dressing over the vegetables and toss together until well coated.

  • Step 4

    Serve with the toasted almonds on top.
