"Mixed sprouts kachori is a very popular breakfast and snack from North India. They are flaky and crisp shells made with flour, stuffed with Mixed sprouts stuffing. It can be served with Tamarind chutney or sauce. They are usually made with refined flour/maida but can also be made with wheat flour or a mix of wheat flour and refined flour or even with multigrain flour. Stir-fried sprouts or vegetable mixture is made to stuff inside the kachori and then the stuffed kachoris are deep-fried on medium heat till golden and crisp."

ingredients

  • 3 cups boiled mixed sprouts
  • 2 cups fresh maida
  • 1 teaspoons Salt
  • 1 container Cooking oil
  • 1 cups water
  • 3 Green chillies
  • 5 tablespoons Cumin seeds
  • 5 teaspoons Ajwain
  • 5 teaspoons Garam masala
  • 5 tablespoons Chaat masala
  • 3 tablespoons Chilli powder
  • 1 tabelspoons Corriander powder
  • 3 tablespoons Fennel Seeds
  • Coriander leaves

Method

  • Step 1

    Lets half grind the sprouts in a blender

  • Step 2

    Add 2 cups of maida flour or wheat flour in an empty bowl and Finely sieve it

  • Step 3

    Add salt, ajwain, sugar, 4 tablespoons of hot oil to the flour and mix all the ingredients well

  • Step 4

    Now add one cup of water and make a dough

  • Step 5

    Now take a pan and heat it on medium flame. Add 3 table spoon of cooking oil

  • Step 6

    Once the oil is hot add Cumin seeds and chopped green chillies and fry them.

  • Step 7

    Now add sprouts, garam masala, coriander powder, salt, chilli powder, chaat powder, fennel seeds, and fry it for about 3 minutes.

  • Step 8

    Lastly, add chopped coriander for the mixture and turn of the flame. Allow it to cool

  • Step 9

    Take the small-sized dough and flatten it slightly and stuff the ingredients and pack the dough and flatten it again.

  • Step 10

    In a pan heat cooking oil for deep frying the kachori.

  • Step 11

    Once the oil is at moderate heat deep fry the kachori for about 3 minutes or until it turns golden brown. Note* fry it on medium flame only.

  • Step 12

    Take the kachori out of oil and its ready to serve with tamrind chutney or tomato sauce
