Lately, I have been wanting to reduce the amount of animal byproducts that I consume. Personally, I think a great way to do this is to substitute plant-based products in some of my favorite recipes that I make.
I love a good cheesy situation and sometimes it is super hard to find a great plant-based option for cheese. Look no further! @vevan.foods Ched-Melts and P’Jack-Melts are great! Here’s a simple easy recipe that doesn’t require a whole lot of ingredients and honestly you don’t even have to season it because between the soyrizo and the cheese, I found that it tasted just right! Let me know if you try this and if you liked it!

ingredients
- 2 ounces soy chorizo, sliced or crumbled, more as needed
- olive oil
- 6 ounces Vevan Ched-Melts and P’Jack-Melts, roughly cut up into smaller pieces, more as needed
- 1/2 cup pico de gallo
- fresh cilantro, for garnish
- tortilla chips, for serving
Method
Step 1
Heat an 8” cast iron skillet over medium heat. Add soy chorizo and cook until crispy, about 5 minutes. Remove from skillet, set aside.
Step 2
Heat a little oil in skillet over low heat.
Step 3
Slowly add Vevan Ched-Melts and P’Jack-Melts, stirring to melt and adjusting the heat if necessary to prevent burning.
Step 4
When the cheese is mostly melted, remove from heat and allow cheese to fully melt.
Step 5
Add soy chorizo and pico de gallo, stirring until combined. Garnish with cilantro. Serve with tortilla chips for dipping and enjoy!
