- 1 pound chicken thighs
- 2 cup fingerling potatoes, sliced

Greek Yogurt Marinade
- 1/2 cup olive oil
- 1/2 cup Greek Yogurt
- 1/4 cup red wine vinegar
- Juice of 1 lemon
- 2-3 tablespoons honey
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/2 teaspoon kosher salt
- 1/2 teaspoon pepper

Step 1
Preheat the oven to 350°F.
Step 2
In a bowl, combine olive oil, Greek yogurt, red wine vinegar, lemon juice, honey, garlic powder, paprika, oregano, parsley, salt, and pepper. Mix well and set aside.

Cut fingerling potatoes into thin slices, then sprinkle with salt and pepper.

In a large baking dish, arrange the sliced potatoes. Place chicken thighs on top of the potatoes and sprinkle with additional salt and pepper. Pour the prepared Greek yogurt marinade over the chicken and potatoes.

Cook for about 60 minutes or until the potatoes can be easily pierced with a fork.

For a golden finish, broil for an additional 3-4 minutes until the chicken and potatoes turn nicely browned.
