For the Eggs

  • 12 large eggs
  • 1 package (12 slices) bacon
  • 3 tablespoons mayonnaise
  • Reserved bacon grease (from cooked bacon)
  • 1 cup shredded cheddar cheese
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh lemon juice, to taste
  • Freshly chopped chives, for garnish
  • Hot honey buffalo sauce (below), for topping

For the Hot Honey Buffalo Sauce

  • 3 tablespoons mayonnaise
  • 1/4 cup buffalo sauce
  • 3 tablespoons hot honey (or regular honey)
  • Juice from half a lemon

Method

To prepare the eggs

  • Step 1

    Place the eggs in a pot of cold water. Bring to a boil, then reduce the heat and simmer for 10 minutes. Remove eggs, cool in an ice bath, and peel.

  • Step 2

    Preheat the oven to 400°F.

  • Step 3

    Arrange bacon slices on a baking sheet and cook for about 10 minutes, or until crispy. Remove from oven, let cool, and cut into small bits. Reserve the bacon grease.

  • Step 4

    Cut the cooled boiled eggs in half and remove the yolks.

  • Step 5

    Place yolks in a large mixing bowl. Add the mayonnaise and the reserved bacon grease. Mash and mix with a fork until smooth.

    Stir in the shredded cheddar cheese and about 3/4 of the bacon bits into the egg yolk mixture. Mix well until fully combined. Season with salt, pepper, and lemon juice to taste.

  • Step 7

    Spoon the egg yolk mixture back into the egg whites. Top with remaining cheese and bacon bits.

  • Step 8

    Reduce the oven to 350°F. Place the filled eggs on a baking sheet and bake for about 5 minutes, or until the cheese is melted.

  • Step 9

    To make the hot honey buffalo sauce: In a small bowl, whisk together the mayonnaise, buffalo sauce, hot honey, and lemon juice. Season to taste.

  • Step 10

    Garnish the eggs with chopped chives, reserved bacon bits, and drizzle with hot honey buffalo sauce before serving.
