Linguine With Arugula Pesto
The new wave: cooking while traveling. As many great restaurants as there are in NYC, sometimes you just want a home cooked meal. Pictured here is linguine tossed with arugula pesto and topped with baby arugula leaves and grated Parmesan. Pesto is super easy to make. <br>RECIPE:<BR><BR>Put a handful of arugula in a blender or food processor along with 3 cloves of garlic, about 1/2 cup of extra virgin olive oil, a squeeze of lemon juice, and about 1/4 cup of grated Parmesan. <BR>Pulse together until smooth. <BR>Pour on top of hot linguine, add in chopped artichoke hearts, and toss it all together. <BR>Easy and delicious.
