To create these S'mores Nice Cream Jars that are both vegan and gluten-free, a delightful mixture of frozen bananas, cashew butter, and cocoa powder is blended together to form a creamy "nice cream". This is then layered with vanilla coconut yogurt, a homemade vegan graham cracker crumble, and topped off with marshmallows. The result is a delicious dessert that captures the classic flavors of s'mores.

ingredients
Graham cracker
- 3/4 cups plus 2 tablespoons almond flour
- 1/3 cup coconut sugar or monk fruit
- 1 teaspoon vanilla + pinch of sea salt
- 1/4-1/3 cup melted vegan butter or coconut oil
- 1 teaspoon cinnamon
Method
Step 1
Mix everything together, starting with 1/4 cup oil (it’ll depend on the brand of almond flour you use, how much oil you’ll need), until everything holds together. crumble onto a cookie sheet or press into a rectangle (to make actual grahams) & bake at 350f for 12-16 mins, until golden. (they’ll harden up as they cool. don’t over-bake!)

Nice cream
- 2 frozen bananas cut into coins
- 1/4 cup coconut cream (solid part from canned coconut milk)
- 1/4 cup cashew butter
- 1 teaspoon vanilla
- 2 tablespoons cacao powder
- Plant milk, as needed (or coconut milk from the can you used for the cream!)
- 1 scoop of protein
- Vanilla coconut yogurt for layering
- Marshmallows
Step 1
Blend all of the nice cream ingredients until smooth, starting with a little milk at a time. you still want it to be thick! divide it amongst jars (or add some to one jar & save extras in an air tight container in the freezer). Layer with the crumbled grahams, coconut yogurt if you’d like, & top with more crumble & mallows!
