Here's another gluten free and vegan Cinco de Mayo smash! My dad made these all the time growing up. I LOVE the way he makes them and I can never make them the same. So I have made a few changes to be a little more nutritious. Fill a corn tortilla with mashed black beans, a few diced onions and a sprinkle of nutritional yeast and fold in half. Brush each side of the tortilla with a little bit of olive oil and broil low for a few mins on each side. Pay attention to them, they can burn in a blink of an eye. Once done cooking fill with salsa, avocado and lime juice. If you aren't vegan feel free to add cheese just make sure it is "clean". enjoy! -@dancinggingeralex
