RECIPE:
INGREDIENTS
1 cup almond flour
1 cup almond milk
1 cup shredded coconut
6 tbsp. coconut oil
4 eggs
1 tsp. salt
1 ½ tsp. baking powder
1 orange (zest)
1 vanilla bean (seeds)
4 cups of fruit (I used plums, peaches, strawberries, blueberries and raspberries)

METHOD
Mix all ingredients in a high-speed blender. Add almond flour last and blend until just combined. Pour batter in your (coconut-oil-greased) cake tin (I used a 10” x 10” square) and top with fruit. Bake in pre-heated oven at 350F for about 45 minutes.

RAW VANILLA-ORANGE CHEESECAKE

(vegan, sugar-free, gluten- and grain free)

INGREDIENTS

Crust:
1 cup cashews, soaked
½ cup almonds, soaked
½ cup shredded coconut
¼ cup coconut oil
1 orange, juice and zest
Pinch of salt
Filling:
1 ½ cups cashews, soaked
½ cup coconut oil
1 cup coconut cream
¼ cup shredded coconut
2 oranges, juice and zest
1 vanilla bean, seeds
Decoration:

5-7 figs
7-10 blackberries
Coconut smiles
Shredded coconut


METHOD

Combine all crust ingredients in a blender and pulse until just combined. Line a spring form (8” diameter) with parchment paper. Press the batter into the bottom of the spring form. Place in the freezer until solid.
Combine all filling ingredients in a blender and blend on high speed until smooth. Pour the filling on the hardened crust and place the spring form back in the freezer for a couple of hours. Move the cake to the fridge for another few hours until the texture is silky-smooth.
Remove the cake from the spring form and decorate with figs, blackberries, coconut smiles and shredded coconut.
Tip: If you are not used to eating unsweetened desserts, you can replace the ¼ cup shredded coconut in the filling with ¼ cup of maple syrup or coconut nectar.

Approximate recipe:

Crust:
1/4 cup coconut oil
1/3 cup almond flour
1/3 cup shredded coconut, finely ground
Pinch of salt


Filling:
1 1/2 cups cashews (soaked)
1 cup coconut cream (can, full-fat, solid part only)
1 orange (juice and zest)
1 vanilla bean
1/3 cup blackberries
Pinch of salt


Decoration:
Blackberries
Whipped coconut cream


Method:
Mix crust ingredients into a dough. Add more almond flour if it's too sticky. Make quarter-size little balls, flatten and press into the bottom of a muffin tray. Put in the freezer.

In the meantime, combine ingredients for the filling in a blender and blend until smooth.

Pour filling in muffin molds on top of the crust. Decorate with halved blackberries. Put back into the freezer for at least three hours. Must be solid.

Use a smooth knife to take the little cakes out of the molds. I wrapped a warm tea towel around each mold for a few seconds before, to melt the cakes slightly around the bottom and perimeter.

I think they have the best texture when you put them in the fridge for another few hours.

It doesn’t interest me what you do for a living. I want to know what you ache for and if you dare to dream of meeting your heart’s longing. I don't care how old you are. I want to know if you will risk looking like a fool for love for your dream for the adventure of being alive. It doesn’t interest me what planets are squaring your moon. I want to know if you have touched the center of your own sorrow. If you have been opened by life’s betrayals or have become shrivelled and closed from fear of further pain. I want to know if you can sit with pain mine or your own without moving to hide it or fade it or fix it. I want to know if you can be with joy mine or your own. If you can dance with wildness and let life fill you to the tips of your fingers and toes without cautioning us to be careful to be realistic to remember the limitations. It doesn’t interest me if the story you are telling me is true. I want to know if you can disappoint another to be true to yourself. If you can bear the accusation of betrayal and not betray your own soul. If you can be faithless and therefore trustworthy. I want to know if you can see beauty even when it is not pretty every day. I want to know if you can live with failure yours and mine and still stand at the edge of the lake and shout to the silver of the full moon: Yes. It doesn't matter to me where you live. I want to know if you can get up after the night of grief and despair weary and bruised to the bone and do what needs to be done to feed the children. Swedish Pancakes. Winter Edition. Grain-free. Dairy-free. No Junk. And easy. BASIC INGREDIENTS: 3 eggs 1/2 cup Coconut Oil 2 Oranges (Juice and Zest) 1/2 cup Almond Milk 3/4 cups Ottos Cassava Flour 1 tsp. Baking Powder 2 tbsp. Maple Syrup 1/4 tsp. Himalayan Sea Salt WINTER INGREDIENTS (OPTIONAL): 1/4 tsp. Cinnamon 1/4 tsp. Cardamom 1/2 tsp. Almond Extract 1/2 tsp. Vanilla Extract 1 tbsp. Hazelnut Butter Nutmeg METHOD: Blend all ingredients in a high-speed blender, eggs, fat and liquids first. Add more almond milk if needed, until the batter is almost liquid. (Consistency of a smoothie.) Heat a little coconut oil in a non-stick pan on medium heat. Pour just under 1/4 cup of the batter into the pan and spread it as thin as possible by quickly tilting the pan. Bake for about 30 seconds on each side. Funny how when you touch something, it touches you back. @ashleelangholz The little, white, upside-down heart on Finn's chest. When I touch it, it touches me back. My feet in warm sand and cold ocean water. The bark of a tree. Kneading bread dough, fresh linen, the hand of a loved person, hugs. They touch me back. And life. Touching life. In my home town in Germany, we have a carnival. It comes into town twice a year; once in early spring and once in late summer. Growing up, we didn’t do ‘entertainment’ things. We played in the fields behind our house, we rode our bikes and built forts and rode ponies, and in the summer, my parents loaded up the car and we drove South with just a tent, a caravan sometimes. But we never missed a carnival. Not once. It was an extra expense for a family of six, so throughout the year, my dad collected his change in a special wooden box in the living room. And when the day came, we felt like royalty: The merry-go-round, the go-carts, the labyrinth, the raffle games, cotton candy and fried plantain patties. He wanted us to have it all. His laughter, his light-heartedness and his joy.
