Almond Flour Cake
RECIPE:
INGREDIENTS
1 cup almond flour
1 cup almond milk
1 cup shredded coconut
6 tbsp. coconut oil
4 eggs
1 tsp. salt
1 ½ tsp. baking powder
1 orange (zest)
1 vanilla bean (seeds)
4 cups of fruit (I used plums, peaches, strawberries, blueberries and raspberries)

METHOD
Mix all ingredients in a high-speed blender. Add almond flour last and blend until just combined. Pour batter in your (coconut-oil-greased) cake tin (I used a 10” x 10” square) and top with fruit. Bake in pre-heated oven at 350F for about 45 minutes.

Raw Vanilla-orange Cheesecake
RECIPE:

RAW VANILLA-ORANGE CHEESECAKE

(vegan, sugar-free, gluten- and grain free)

INGREDIENTS

Crust:
1 cup cashews, soaked
½ cup almonds, soaked
½ cup shredded coconut
¼ cup coconut oil
1 orange, juice and zest
Pinch of salt
Filling:
1 ½ cups cashews, soaked
½ cup coconut oil
1 cup coconut cream
¼ cup shredded coconut
2 oranges, juice and zest
1 vanilla bean, seeds
Decoration:

5-7 figs
7-10 blackberries
Coconut smiles
Shredded coconut


METHOD

Combine all crust ingredients in a blender and pulse until just combined. Line a spring form (8” diameter) with parchment paper. Press the batter into the bottom of the spring form. Place in the freezer until solid.
Combine all filling ingredients in a blender and blend on high speed until smooth. Pour the filling on the hardened crust and place the spring form back in the freezer for a couple of hours. Move the cake to the fridge for another few hours until the texture is silky-smooth.
Remove the cake from the spring form and decorate with figs, blackberries, coconut smiles and shredded coconut.
Tip: If you are not used to eating unsweetened desserts, you can replace the ¼ cup shredded coconut in the filling with ¼ cup of maple syrup or coconut nectar.

Mini Vegan Cheesecakes
Approximate recipe:

Crust:
1/4 cup coconut oil
1/3 cup almond flour
1/3 cup shredded coconut, finely ground
Pinch of salt


Filling:
1 1/2 cups cashews (soaked)
1 cup coconut cream (can, full-fat, solid part only)
1 orange (juice and zest)
1 vanilla bean
1/3 cup blackberries
Pinch of salt


Decoration:
Blackberries
Whipped coconut cream


Method:
Mix crust ingredients into a dough. Add more almond flour if it's too sticky. Make quarter-size little balls, flatten and press into the bottom of a muffin tray. Put in the freezer.

In the meantime, combine ingredients for the filling in a blender and blend until smooth.

Pour filling in muffin molds on top of the crust. Decorate with halved blackberries. Put back into the freezer for at least three hours. Must be solid.

Use a smooth knife to take the little cakes out of the molds. I wrapped a warm tea towel around each mold for a few seconds before, to melt the cakes slightly around the bottom and perimeter.

I think they have the best texture when you put them in the fridge for another few hours.

One more cake picture, friends. For the bakers among you: It's an Almond- and Olive-Oil cake. Grain-free and dairy-free, sweetened with dates. The frosting is Vegan: Made with coconut oil, coconut butter, cacao butter, a blend of powdered raw coconut- and cane sugars, vanilla bean seeds, rose water, orange zest and a little cardamom. # Here's the thing: I'm a sad pushover for cake. Anything that contains carbohydrates and comes from the oven is my friend, no questions asked. But Frank, Frank is not one to be easily swayed by cake. A lot of my healthy-ish baking is actually met with apologetically raised eyebrows. Of this one, when I asked him to try it —while being the most annoying person I know to be and staring at him awaiting his reaction— he said that I should consider baking cake for a living. Ha! # So. Monday mornings, for me, are full of determination and hope that in the week ahead, I will get all the shit done (work and life) and still take care of myself by eating right, sleeping and working out. In case you're the same, here is (a reminder for, in case you already know it) one of my all-time favorite life hacks: • The Pareto principle (also known as the 80/20 rule or the law of the vital few) specifies an unequal relationship between inputs and outputs. The principle states that 20% of the invested effort is responsible for 80% of the results obtained. In order to produce the additional 20% of results to get to 100%, an additional 80% of input/effort is needed. • Isn't that cool to know when we plan where to invest our resources?
