ingredients

  • 1/2 cup soy or almond milk
  • 3/4 tablespoon apple cider vinegar
  • 2 tablespoons coconut whipped cream
  • 1 teaspoon vanilla extract
  • 3/4 tablespoon baking powder
  • 1 tablespoon cocoa powder
  • 1 cup wholemeal flour
  • pinch of salt

Method

  • Step 1

    In a mixing bowl, whisk together dry ingredients.

  • Step 2

    Add milk, apple cider vinegar, and vanilla. Gently stir until just combined.

  • Step 3

    Heat vegan butter or oil in a large nonstick skillet over medium heat. Add a ladleful of batter and cook until bubbles appear on the surface (about 2-3 minutes). Flip and cook until the other side is done (about 1 minute longer) and transfer to a plate. Continue with remaining batter.

  • Step 4

    Top pancakes with coconut whipped cream, vegan marshmallows, or any toppings of choice.
