1 cup quick cook oats
1/2 cup soy milk
1 medium sized ripe banana
2 1/2 tsp apple cider vinegar (or lemon juice)
2 1/2 tsp baking powder
1 tbsp sugar or sweetener
1/4 tsp salt
1/2 tsp cinnamon
Combine everything in a blender or food processor. Blend or pulse until just to incorporate the ingredients. Do not overmix.
Let the mixture sit for 5-10 minutes to thicken.
Over a medium heat nonstick pan, pour a heaping tablespoon of the batter. You can adjust the heat of the pan to low. Wait until edges are almost done about 5 min.
