MONDAY Roasted Carrot Harissa Soup

Turn a sheet pan of roasted carrots into a spicy bowl of hot soup with the help of a blender, coconut milk, harissa, and plenty of vegetable stock. Serve this soup with [vegan] grilled cheese or garlic bread and garnish with tender herbs, chili oil, and toasted nuts and seeds. 
TUESDAY Potato Salad with Lemony Spiced Dressing

WEDNESDAY Braised Chickpeas with Marinated ‘Feta’

These braised chickpeas are perfect for a quick weeknight meal! They are slow-cooked in homemade veggie stock and loaded with spices, dates, herbs, and root vegetables until most of the liquid has evaporated and you are left with a thick, almost syrupy dark gravy. Serve over rice for a complete meal. 
THURSDAY Bulgar Stuffed Acorn Squash

Stuffed acorn squash is perfect for the fall and winter seasons. These are stuffed with bulgar to make them even more filling. The squash is seasoned with unique ingredients such as chai tea and brown sugar.
