- 70 gram Tomato Roma
- 3 pieces Garlic
- 100 grams Bread
- 10 milliliter Apple vinegar
- 6 grams Salt
- 250 grams Strawberries
- 1 tablespoon Dijon mustard
- 150 milliliter Extra virgin olive oil

Prawn tartare
- 600 grams Tiger prawns (20pc/kg)
- 1 pieces Lime
- 4 tablepoons Soy sauce
- 20 milliliter Extra virgin olive oil
- 10 grams Spring onion

Guacamole
- 200 grams Avocado
- 10 grams Cilantro
- 1 pieces Lime
- 2 grams Salt

Garnish
- 4 tablespoon Caviar oil
- 12 pieces Ito togarashi
- 16 pieces Basil microgreens
- 16 pieces Picos bread or croutons
Method
Step 1
Salmorejo Soup: Blend all the ingredients and strain it with a chinois. Leave it for 12 hours in the chiller
Step 2
Prawn Tartare: Thoroughly clean the prawns by removing the shells and the heads. Chop the cleaned prawns into small dices and let it marinate with lime juice, soy sauce, extra virgin olive oil and finely chopped spring onions
Step 3
Guacamole: Chop the avocados and cilantro into a bowl and mix it with lime juice and salt
Step 4
Plate the prawn tartare and the guacamole on a bowl and serve the soup separately for guests to pour it into the bowl.
