Vinaigrette
- 100 gram Raspberry Vinegar
- 1 gram Balsamic Vinegar
- 1 gram Honey
- 1/2 gram Whole Grain Mustard
- 130 grams Olive oil
- Kosher Salt
Method
Step 1
Add all the ingredients into a blender and blend until smooth
Step 2
On to the paste, add and slowly fold in the olive oil and season with salt.

- 3 pieces French Bean spear (Boiled)
- 3 pieces Beetroot cube (Boiled)
- 6 pieces Corn kernel (Boiled)
- 2 pieces Cucumber sliced (boiled)
- 2 pieces Asparagus halfed (Boiled)
- 4 pieces Carrot diced (Boiled)
- 2 pieces Broccoli cube (Boiled)
- 2 pieces Cauliflower cube (Boiled)
- 3 pieces Potato chips (optional) for garnish (Fried)
- 2 pieces Lotus root chips (optional) for garnish (Fried)
- 30 grams Eggplant mashed (Baked)
- 2 pieces Blackberry and Raspberry (Fresh)
- 2 pieces Sliced orange (fresh)
- 5 grams Alfalfa sprout (fresh)
- 20 grams Raspberry vinaigrette
- Salt & pepper
Step 1
Prepare the ingredients as mentioned above (when you are required to boil you can let it boil for 2 minutes in salted water). For frying use, a mandoline to thinly slice the lotus root and potato chips (optional) and they fry them until crisp in an air fryer at 160 degrees.
Step 2
You can add all the ingredients to a bowl and gently toss them until they are roughly mixed and coated with the vinaigrette.
