ingredients
- 1 litre Water
- 200 grams Sugar
- 10 Cardamom pods
- 15 grams Pandan Leaf (available at Asian markets)
- 100 grams Coconut Milk Powder
- 100 grams Corn Flour
Method
Step 1
Place the first four ingredients in a medium saucepan. Let mixture boil until the spices release their flavour, around 10 minutes. Strain the syrup through a fine strainer into another saucepan.
Step 2
Return syrup to a boil it and add coconut powder. Whisk until combined.
Step 3
Add about 2 tablespoons water into corn flour to make a slurry. Pour mixture into the boiling coconut milk, whisking constantly until thickened.
Step 4
Transfer the mixture into a ceramic bowl or mould. Let pudding sit at room temperature until cool, then refrigerate overnight.
Step 5
Remove it from the fridge the following day and enjoy!
