A Vegan twist on a classic, these noodles are inspired by Dan Dan noodles which traditionally have ground meat, smoky notes and peanuts. It's one of the most famous Sichuan street foods.
In this recipe the ground meat is mimicked by minced Shiitake Mushrooms, tofu and walnuts (similar to a vegan bolognese sauce) with simple yet flavorful peanut sauce with mirin, tamari/or soy sauce and brown sugar. Serve this over rice or with any noodle you like!
