Soup
- 42 ounces EPIC Turkey Cranberry Sage Bone Broth
- 1 stalk of lemongrass
- 1 8 ounce can of coconut milk
- 3 1" pieces fresh ginger, minced
- 1 2" piece fresh turmeric, minced
- 1 shallot, peeled and chopped
- 2 teaspoons lime zest
- 2 limes, juiced
- 1 teaspoon salt
- 1 sweet potato, peeled and cut into ½” pieces
- 1 zucchini, cut into ½” pieces
- 2 tablespoons olive oil, divided
- 5 leaves fresh basil

Turkey Meatballs
- 1 pound ground turkey
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon red chili flakes
Method
Soup
Step 1
Preheat the oven to 375F. Line a sheet tray with parchment paper.
Step 2
Peel lemongrass. Crush by rolling with a rolling pin, then cut into pieces.
Step 3
In a large pot, add lemongrass, broth, coconut milk, ginger, turmeric, shallot, lime zest, lime juice, and salt. Bring to a low boil over medium heat. Lower heat and simmer for 50 minutes.
Step 4
Toss sweet potato and zucchini with 1 tablespoon olive oil on prepared baking sheet. Bake for 25 minutes, tossing halfway through baking.
Turkey Meatballs
Step 1
In a medium bowl, add turkey, salt, pepper, garlic powder, onion powder and chili flakes, mix well. Form into 1 ½-inch balls.
Step 2
Add remaining 1 tablespoon olive oil to a large skillet over medium heat. Add turkey meatballs, cook for 15 to 20 minutes, constantly turning every few minutes, until the turkey is cooked through.
Step 3
Remove lemongrass stalk from broth. Add meatballs, roasted zucchini and sweet potatoes.
Step 4
Top with fresh basil and enjoy.
